VeganMofo: Happy Chuseok, Korean Harvest Festival

Yesterday marked the beginning of Chuseok, also called Hangawi, a big harvest festival in Korea.  We skyped with the family in Korea and watched them pay respects to the ancestors and enjoy a wonderful Harvest meal.  During our visit this summer, every meal was a big feast, but this weekend’s celebration is even grander.

Today, we decided to have our own vegan korean feast. In comparison to our meals in Korea, it was very modest.

I made dukk-gook (Tofu and Rice Cake Soup) and  a marinated steamed spinach panchan.
